Crock Pot Applesauce

We tried a new way to make applesauce yesterday--in a crock pot. And it was a great success! Here's how we did it:

Wash and peel your favorite apples. (We probably used a dozen or so--a mix of sweet ones and tart ones.) Cut them up into chunks and dump them all in the crock pot. Sprinkle about a tsp of cinnamon on top, then pour 1-1.5 cups of water over everything. Sprinkle another tsp or so of cinnamon on top again. Set the crock pot on high and let it sit for a couple hours.

When your kitchen starts smelling like apple pie, give the apples a stir. If they just fall apart at the sight of the spoon, then pull out your blender or food processor. If you like your applesauce really smooth, pour all the apples into the blender and give it a few quick pulses. That's all it should take. If you like your apple sauce slightly chunky, then quickly pulse about 2/3 of it and pour it back into the chunky apples left in the crock pot.

Then divide the applesauce into containers and let it cool. Once it's cool, you can put some in the fridge and some in the freezer to save for later.

This way was so much easier than the old way I used to make applesauce. A few years ago, my mom gave me her old food mill. I used to cook the apples in the microwave to soften them, and then grind them through the food mill. It was a lot of work. I'm glad I tried this new way of doing it!

And even better, we joined a food co-op this month, and next week we should have 20 pounds of organic pears to play with! Pear sauce is SO yum! Can't wait!
